
Moises Chaguala produced this coffee on the farm La Maria in Huila, Colombia.
This coffee is a newly discovered variety called Papayo Aji. It is a natural process that has been elaborated by an extended fermentation, both submersed in water and during drying. It produces a richly textured cup, sporting notes of black plum, panela and walnut praline.
