This beautiful, limited edition coffee exhibits complex tropical flavours, with a clean profile and a creamy mouthfeel. These flavours are the result of the variety, the meticulous picking and processing techniques, and in particular what is identified as 'Lactic Natural' processing.
What is 'Lactic Natural' processing? After coffee cherries are picked from the trees, they are exposed to a dry fermentation for 24 hours, and then sealed in GrainPro bags and kept below 22 degrees for 90 hours. The combination of these processes lead to higher concentrations of lactic acid, hence the name Lactic Natural.
